SRI LANKAN DATE CAKE – AN ESSENTIAL AVURUDU TREAT

  Whenever we were entertaining large groups (of that there were many because there are never small groups when it comes to Sri Lankan gatherings) whether it be for tea, for goodie plates on avururdu or some other occasion, my mother always used to say “Let’s make a date cake”.  And there I would sit with a knife and a chopping board, slicing away at heaps of sticky moist dates, pitting them and then chopping them into smaller pieces. It wasn’t so bad really and I was always excited about the prospect of popping a date here and there into my mouth when no one was watching. The point being, the Sri Lankan date cake is by far the easiest cake to make to entertain large crowds and is one of those dishes that got adopted into the repertoire of Sri Lankan food and made itself home there. Falooda Recipe | How To Make Basic Faluda With Ice Cream

  Falooda recipe  with step by step photos and video.   Ingredients 2 1/2 c all-purpose flour 2 c sugar 1 Tbsp cocoa powder, unsweetened 1 tsp baking soda 1 tsp salt 2 eggs 1 c oil 1 c buttermilk 1 Tbsp white vinegar 1 tsp pure vanilla extract 1 oz green food coloring (yes! the whole bottle) FROSTING: 8 oz cream cheese, room temperature 1/4 c butter, room temperature 2 tsp pure vanilla extract 1 lb powdered sugar · milk if needed for texture (i seldom need any) Preheat oven to 350 and line your cupcake pans. Whisk eggs in a med bowl and then add remaining wet ingredients (EXCEPT FOOD COLORING), set aside. In your stand mixer put all dry ingredients and mix well. Add food coloring into the wet ingredients, whisk well then slowly add to dry ingredients beating on med for 1 - 2 minutes (do not overbeat your cupcakes will get dense and not be so fluffy).
